Sweet Potato And Carrot Soup
I spy a cinnamon stick… Winter meals call for warm and hearty. This sweet potato and carrot soup offers just that!
Sauté 1 yellow onion with light Himalyan salt
Add 4 chopped large carrots
Add 1 large chopped sweet potato
Add 1 32 oz container of vegetable broth
Add spices- 1 tsp turmeric, black pepper, cumin, tarragon, and 1 tbs of tamarind paste
Cook until vegetables are soft and blend with a small piece of fresh ginger
Top with scallion, pepitas, and a cinnamon stick
