Sweet Potato And Carrot Soup

I spy a cinnamon stick… Winter meals call for warm and hearty. This sweet potato and carrot soup offers just that!

  • Sauté 1 yellow onion with light Himalyan salt

  • Add 4 chopped large carrots

  • Add 1 large chopped sweet potato

  • Add 1 32 oz container of vegetable broth

  • Add spices- 1 tsp turmeric, black pepper, cumin, tarragon, and 1 tbs of tamarind paste

  • Cook until vegetables are soft and blend with a small piece of fresh ginger

  • Top with scallion, pepitas, and a cinnamon stick
