Lunch: Avocado Sourdough Toast & Roasted Cauliflower
After three days of kitchari, you are probably looking forward to something different. Treat yourself to a fresh thick slice of sourdough bread. Make it a more vibrant avocado toast by adding a mix of spices and tastes.
Ingredients:
1 slice sourdough bread, toasted
1/2 ripe avocado
1/4 tsp cumin powder
1/4 tsp turmeric powder
1/4 tsp black pepper (helps with turmeric absorption)
1/2 tsp sesame seeds (optional)
Fresh cilantro or mint, chopped, for garnish
Pinch of Himalayan salt or sea salt
1/4 tsp ghee or olive oil (optional)
Instructions:
Toast or Grill the Bread: Toast your slice of sourdough
Prepare the Avocado Spread: In a small bowl, mash the avocado with a pinch of Himalayan salt, cumin, turmeric, and black pepper until well combined.
Assemble the Toast: Spread ghee or drizzle olive oil on the toast then add the spiced avocado mixture evenly over the toasted sourdough.
Garnish and Drizzle: Sprinkle sesame seeds and fresh cilantro or mint over the avocado.

Ingredients:
1 head cauliflower, cut into florets
2 tbsp olive oil
1 tsp ground cumin
Salt and black pepper, to taste
Instructions:
Preheat the oven to 350°F
Season the cauliflower: In a large bowl, toss the cauliflower florets with olive oil, cumin, salt, and pepper until evenly coated.
Roast: Spread the cauliflower in a single layer on a baking sheet. Roast for ~ 30 minutes, until golden and tender.
Garnish and serve: Remove from the oven, garnish with fresh herbs if desired, and enjoy warm.
