Lunch: Avocado Sourdough Toast & Roasted Cauliflower

After three days of kitchari, you are probably looking forward to something different. Treat yourself to a fresh thick slice of sourdough bread. Make it a more vibrant avocado toast by adding a mix of spices and tastes.

Ingredients:

  • 1 slice sourdough bread, toasted

  • 1/2 ripe avocado

  • 1/4 tsp cumin powder

  • 1/4 tsp turmeric powder

  • 1/4 tsp black pepper (helps with turmeric absorption)

  • 1/2 tsp sesame seeds (optional)

  • Fresh cilantro or mint, chopped, for garnish

  • Pinch of Himalayan salt or sea salt

  • 1/4 tsp ghee or olive oil (optional)

Instructions:

  1. Toast or Grill the Bread: Toast your slice of sourdough

  2. Prepare the Avocado Spread: In a small bowl, mash the avocado with a pinch of Himalayan salt, cumin, turmeric, and black pepper until well combined.

  3. Assemble the Toast: Spread ghee or drizzle olive oil on the toast then add the spiced avocado mixture evenly over the toasted sourdough.

  4. Garnish and Drizzle: Sprinkle sesame seeds and fresh cilantro or mint over the avocado.

  5. Serve Warm: Enjoy immediately while the toast is still warm.

Side of Roasted Cauliflower

Ingredients:

  • 1 head cauliflower, cut into florets

  • 2 tbsp olive oil

  • 1 tsp ground cumin

  • Salt and black pepper, to taste

Instructions:

  1. Preheat the oven to 350°F

  2. Season the cauliflower: In a large bowl, toss the cauliflower florets with olive oil, cumin, salt, and pepper until evenly coated.

  3. Roast: Spread the cauliflower in a single layer on a baking sheet. Roast for ~ 30 minutes, until golden and tender.

  4. Garnish and serve: Remove from the oven, garnish with fresh herbs if desired, and enjoy warm.

Ayurvedic Benefits:

  • Warming and Digestive: Cumin and turmeric are warming spices that support digestion, making this toast gentle and suitable for all doshas.

  • Balancing: Avocado provides healthy fats, which help ground Vata, while sourdough's slight tanginess aids digestion without aggravating Pitta or Kapha.

  • Nourishing: Sesame seeds add an extra layer of grounding energy, which is especially balancing for Vata dosha.
