Date Bars

These deliciously nourishing date bars are a filling breakfast or snack. No added sugar, just the pure goodness from dates.

Ingredients

  • 1 Cup of Dates (Soaked and Pitted)

  • 1 Cup of Rolled Oats

  • 1/2 Cup of Flour

  • 1/3 Cup of Almond Butter

  • 1 Tablespoon of Ghee

  • 1/2 Cup of Shredded Coconut

  • 3/4 Cup of Almond Milk

  • 2 tsp of Vanilla Extract

  • 1 tsp of Cinnamon

  • 1/2 tsp of Himalayan Salt

  • 1/2 tsp of Baking Soda

  • 1/2 Cup of Sunflower Seeds

Instructions

  • Soak the 1 cup of dates in hot water for at least 15 minutes.

  • Preheat the oven to 350 degrees.

  • Add all of the ingredients (except the sunflower seeds) into a blender or food processor.

  • Pulse until a smooth(ish) consistency.

  • Line an 8x8 baking pan with parchment paper and layer some ghee to prevent any sticking.

  • Evenly spread the mixture into the pan and top with sunflower seeds.

  • Bake for 35 minutes. Use a toothpick or fork to test the middle and ensure it comes out clean.

  • Allow the bars to cool and then slice and store in a glass container.
