Date Bars
These deliciously nourishing date bars are a filling breakfast or snack. No added sugar, just the pure goodness from dates.
Ingredients
1 Cup of Dates (Soaked and Pitted)
1 Cup of Rolled Oats
1/2 Cup of Flour
1/3 Cup of Almond Butter
1 Tablespoon of Ghee
1/2 Cup of Shredded Coconut
3/4 Cup of Almond Milk
2 tsp of Vanilla Extract
1 tsp of Cinnamon
1/2 tsp of Himalayan Salt
1/2 tsp of Baking Soda
1/2 Cup of Sunflower Seeds
Instructions
Soak the 1 cup of dates in hot water for at least 15 minutes.
Preheat the oven to 350 degrees.
Add all of the ingredients (except the sunflower seeds) into a blender or food processor.
Pulse until a smooth(ish) consistency.
Line an 8x8 baking pan with parchment paper and layer some ghee to prevent any sticking.
Evenly spread the mixture into the pan and top with sunflower seeds.
Bake for 35 minutes. Use a toothpick or fork to test the middle and ensure it comes out clean.
Allow the bars to cool and then slice and store in a glass container.
